Ditch the lettuce

There is more to a salad my friends than simply throwing lettuce and tomatoes in a bowl with dressing. I make a point of eating a good amount of veggies each day. That usually translates as a salad. Now, while I can certainly appreciate a great garden salad with colorful, vitamin rich fixings, sometimes, I just want to kick the lettuce out of the bowl!

When that happens, I rely on crisp raw or quickly steamed or even roasted vegetables. Try roasting broccoli and combining it with caramelized onions, goat cheese and a lemon vinaigrette. Or perhaps a pear, walnut and bleu cheese salad with an apple cider vinaigrette. Experiment with your vegetables. Salads don't have to be all about the lettuce. Visit the farmer's market and pick up a few things. Get your oils and vinegars assembled and go wild with your own dressing creations!
